Ingredients

  • Salmon fillets - 2 (about 150g each)
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Couscous - 150g
  • Vegetable broth - 200ml
  • Raisins - 30g
  • Almonds, slivered - 20g

Steps

  1. In a bowl, mix olive oil, minced garlic, cumin, coriander, paprika, cinnamon, salt, and black pepper to create a marinade.
  2. Coat the salmon fillets with the marinade and let them sit for at least 15 minutes.
  3. Meanwhile, in a saucepan, bring the vegetable broth to a boil and add the couscous and raisins. Remove from heat and cover for 5 minutes.
  4. Fluff the couscous with a fork and stir in chopped parsley and slivered almonds.
  5. Heat a non-stick skillet over medium heat and cook the salmon fillets for about 4-5 minutes on each side or until cooked through.
  6. Serve the salmon on a bed of couscous, drizzled with lemon juice, and garnish with additional parsley if desired.
