- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
- Couscous - 150g
- Vegetable broth - 200ml
- Raisins - 30g
- Almonds, slivered - 20g
Steps
- In a bowl, mix olive oil, minced garlic, cumin, coriander, paprika, cinnamon, salt, and black pepper to create a marinade.
- Coat the salmon fillets with the marinade and let them sit for at least 15 minutes.
- Meanwhile, in a saucepan, bring the vegetable broth to a boil and add the couscous and raisins. Remove from heat and cover for 5 minutes.
- Fluff the couscous with a fork and stir in chopped parsley and slivered almonds.
- Heat a non-stick skillet over medium heat and cook the salmon fillets for about 4-5 minutes on each side or until cooked through.
- Serve the salmon on a bed of couscous, drizzled with lemon juice, and garnish with additional parsley if desired.
