Ingredients

  • Carrots - 200 grams, diced
  • Potatoes - 200 grams, diced
  • Green peas - 100 grams, frozen or fresh
  • Red bell pepper - 50 grams, diced
  • Cucumber - 50 grams, diced
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Boil a pot of salted water, then add the diced carrots and potatoes. Cook for about 10 minutes until tender, then add the green peas for the last 2 minutes of cooking.
  2. Drain the vegetables and rinse under cold water to stop the cooking process. Allow to cool completely.
  3. In a large mixing bowl, combine the cooled vegetables, red bell pepper, cucumber, and chopped parsley.
  4. In a separate small bowl, whisk together the olive oil, lemon juice, cumin, salt, and black pepper.
  5. Pour the dressing over the salad and toss gently to combine all the ingredients evenly.
  6. Serve chilled or at room temperature, garnished with additional parsley if desired.
