Ingredients
- Carrots - 200 grams, diced
- Potatoes - 200 grams, diced
- Green peas - 100 grams, frozen or fresh
- Red bell pepper - 50 grams, diced
- Cucumber - 50 grams, diced
- Fresh parsley - 30 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Boil a pot of salted water, then add the diced carrots and potatoes. Cook for about 10 minutes until tender, then add the green peas for the last 2 minutes of cooking.
- Drain the vegetables and rinse under cold water to stop the cooking process. Allow to cool completely.
- In a large mixing bowl, combine the cooled vegetables, red bell pepper, cucumber, and chopped parsley.
- In a separate small bowl, whisk together the olive oil, lemon juice, cumin, salt, and black pepper.
- Pour the dressing over the salad and toss gently to combine all the ingredients evenly.
