Ingredients

  • Zucchini - 2 medium-sized
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Garlic - 1 clove, minced
  • Lemon juice - 30 ml
  • Olive oil - 15 ml
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Wash and trim the zucchini, then cut them into thin rounds or half-moons.
  2. Heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
  3. Add the zucchini slices to the skillet and sauté for about 5-7 minutes until they are tender but still firm, stirring occasionally.
  4. Once cooked, remove the zucchini from heat and let it cool slightly.
  5. In a large mixing bowl, add the chopped parsley, mint, minced garlic, lemon juice, remaining olive oil, cumin, salt, and black pepper.
  6. Stir the ingredients together until well combined.
  7. Add the sautéed zucchini and halved cherry tomatoes to the bowl and gently toss to coat everything in the dressing.
  8. Serve the salad warm or at room temperature, garnished with additional fresh herbs if desired.
