- Zucchini - 2 medium-sized
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Garlic - 1 clove, minced
- Lemon juice - 30 ml
- Olive oil - 15 ml
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100 grams, halved
Steps
- Wash and trim the zucchini, then cut them into thin rounds or half-moons.
- Heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
- Add the zucchini slices to the skillet and sauté for about 5-7 minutes until they are tender but still firm, stirring occasionally.
- Once cooked, remove the zucchini from heat and let it cool slightly.
- In a large mixing bowl, add the chopped parsley, mint, minced garlic, lemon juice, remaining olive oil, cumin, salt, and black pepper.
- Stir the ingredients together until well combined.
- Add the sautéed zucchini and halved cherry tomatoes to the bowl and gently toss to coat everything in the dressing.
- Serve the salad warm or at room temperature, garnished with additional fresh herbs if desired.
