  • Ground beef - 200 grams
  • Chickpeas - 100 grams, cooked
  • Red bell pepper - 1, diced
  • Cucumber - 1, diced
  • Tomato - 1, diced
  • Red onion - 1 small, finely chopped
  • Parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Stir in cumin, paprika, salt, and black pepper; cook for an additional 2 minutes.
  2. Remove the skillet from heat and let the beef cool slightly.
  3. In a large bowl, combine the cooked chickpeas, red bell pepper, cucumber, tomato, red onion, and parsley.
  4. Add the cooked ground beef to the vegetable mixture.
  5. In a small bowl, whisk together the remaining 1 tablespoon of olive oil and lemon juice. Pour over the salad and toss to combine.
