Ingredients

  • Cauliflower - 200 grams, riced
  • Cucumber - 100 grams, diced
  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 50 grams, diced
  • Red onion - 30 grams, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin - 1/2 teaspoon

Steps

  1. Start by ricing the cauliflower: cut it into florets and pulse in a food processor until it resembles grains.
  2. In a large skillet over medium heat, add the riced cauliflower and sauté for about 5-7 minutes until tender but not mushy. Allow to cool.
  3. While the cauliflower cools, prepare the vegetables: dice the cucumber, halve the cherry tomatoes, and dice the red bell pepper.
  4. In a large bowl, combine the cooked cauliflower, diced cucumber, cherry tomatoes, red bell pepper, and red onion.
  5. Add the fresh parsley and mint to the bowl and mix well.
  6. In a small bowl, whisk together the lemon juice, olive oil, salt, black pepper, and cumin.
  7. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  8. Serve chilled or at room temperature.
