Ingredients

  • Canned sardines in olive oil - 200 grams
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Open the canned sardines and drain them, reserving the olive oil for later use.
  2. In a mixing bowl, combine the diced cucumber, tomato, red bell pepper, and red onion.
  3. Add the chopped parsley and cilantro to the vegetable mix.
  4. In a small bowl, whisk together the lemon juice, 1 tablespoon of the reserved olive oil, ground cumin, salt, and black pepper.
  5. Pour the dressing over the vegetable mixture and toss gently to combine.
  6. Gently fold in the sardines, being careful not to break them apart too much.
  7. Serve immediately or refrigerate for 30 minutes to enhance the flavors.
