- Canned sardines in olive oil - 200 grams
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Red onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Ground cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Open the canned sardines and drain them, reserving the olive oil for later use.
- In a mixing bowl, combine the diced cucumber, tomato, red bell pepper, and red onion.
- Add the chopped parsley and cilantro to the vegetable mix.
- In a small bowl, whisk together the lemon juice, 1 tablespoon of the reserved olive oil, ground cumin, salt, and black pepper.
- Pour the dressing over the vegetable mixture and toss gently to combine.
- Gently fold in the sardines, being careful not to break them apart too much.
- Serve immediately or refrigerate for 30 minutes to enhance the flavors.
