Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Red onion - 30 grams, finely chopped
  • Fresh parsley - 20 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
  3. Remove the quinoa from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork and allow it to cool.
  4. While the quinoa is cooling, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, and finely chop the red onion, parsley, and mint.
  5. In a large mixing bowl, combine the cooled quinoa with the prepared vegetables.
  6. In a small bowl, whisk together the olive oil, lemon juice, ground cumin, salt, and black pepper.
  7. Pour the dressing over the quinoa and vegetable mixture, tossing gently to combine.
  8. Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
