Ingredients

  • Octopus - 300 grams
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Ground cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, bring water to a boil and add the octopus. Cook for about 30-40 minutes until tender. Remove the octopus and let it cool.
  2. Once cooled, chop the octopus into bite-sized pieces.
  3. In a mixing bowl, combine the chopped octopus, cherry tomatoes, cucumber, red onion, parsley, and cilantro.
  4. In a separate small bowl, whisk together olive oil, lemon juice, minced garlic, ground cumin, salt, and black pepper to create the dressing.
  5. Pour the dressing over the salad mixture and toss gently until everything is well coated.
  6. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
