Steps
- Start by washing the potatoes thoroughly and then boil them in salted water for about 15-20 minutes, or until they are fork-tender.
- While the potatoes are boiling, chop the cherry tomatoes, cucumber, and red onion into small pieces.
- Finely chop the fresh parsley and mint, and set aside.
- Once the potatoes are cooked, drain them and allow them to cool slightly before peeling and cutting them into bite-sized cubes.
