  • Fresh parsley - 30 grams
  • Fresh mint - 15 grams
  • Olive oil - 2 tablespoons (30 ml)
  • Lemon juice - 1 tablespoon (15 ml)
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Start by washing the potatoes thoroughly and then boil them in salted water for about 15-20 minutes, or until they are fork-tender.
  2. While the potatoes are boiling, chop the cherry tomatoes, cucumber, and red onion into small pieces.
  3. Finely chop the fresh parsley and mint, and set aside.
  4. Once the potatoes are cooked, drain them and allow them to cool slightly before peeling and cutting them into bite-sized cubes.
  5. In a large bowl, combine the cubed potatoes, cherry tomatoes, cucumber, red onion, parsley, and mint.
