- Red bell pepper - 1 large
- Yellow bell pepper - 1 large
- Green bell pepper - 1 large
- Extra virgin olive oil - 3 tablespoons
- Red wine vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat the grill or grill pan over medium-high heat.
- Cut the bell peppers in half, remove seeds and stems, and brush them with 2 tablespoons of olive oil.
- Place the peppers skin-side down on the grill, and grill for about 10-12 minutes until the skin is charred and the flesh is tender.
- Remove the peppers from the grill and place them in a bowl, covering it with plastic wrap to steam for about 10 minutes.
- Once cooled, peel off the charred skins and slice the peppers into strips.
- In a small bowl, whisk together the remaining 1 tablespoon of olive oil, red wine vinegar, minced garlic, cumin, smoked paprika, salt, and black pepper.
- In a large mixing bowl, combine the grilled pepper strips, dressing, and chopped parsley.
- Toss gently to combine, and top with crumbled feta cheese if desired.
- Serve immediately or let it sit for about 15 minutes to allow flavors to meld.
