Ingredients

  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Green bell pepper - 1 large
  • Extra virgin olive oil - 3 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat the grill or grill pan over medium-high heat.
  2. Cut the bell peppers in half, remove seeds and stems, and brush them with 2 tablespoons of olive oil.
  3. Place the peppers skin-side down on the grill, and grill for about 10-12 minutes until the skin is charred and the flesh is tender.
  4. Remove the peppers from the grill and place them in a bowl, covering it with plastic wrap to steam for about 10 minutes.
  5. Once cooled, peel off the charred skins and slice the peppers into strips.
  6. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, red wine vinegar, minced garlic, cumin, smoked paprika, salt, and black pepper.
  7. In a large mixing bowl, combine the grilled pepper strips, dressing, and chopped parsley.
  8. Toss gently to combine, and top with crumbled feta cheese if desired.
  9. Serve immediately or let it sit for about 15 minutes to allow flavors to meld.
