- Red bell pepper - 1
- Yellow bell pepper - 1
- Green bell pepper - 1
- Garlic - 2 cloves
- Fresh parsley - 30 grams
- Fresh cilantro - 30 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the bell peppers in half, remove the seeds and stems, and place them cut-side down on a baking sheet.
- Roast the peppers in the preheated oven for 20-25 minutes, or until the skins are blistered and blackened.
- Remove the peppers from the oven and place them in a bowl, covering with plastic wrap for 10 minutes to steam and loosen the skins.
- Peel the skins off the roasted peppers and chop them into small pieces.
- Finely chop the garlic, parsley, and cilantro.
- In a mixing bowl, combine the chopped peppers, garlic, parsley, and cilantro.
- Drizzle with olive oil and lemon juice, and sprinkle with ground cumin, salt, and black pepper.
- Toss everything together until well combined.
- Serve the salad slightly warm or at room temperature, garnished with additional herbs if desired.
