Ingredients

  • Red bell pepper - 1
  • Yellow bell pepper - 1
  • Green bell pepper - 1
  • Garlic - 2 cloves
  • Fresh parsley - 30 grams
  • Fresh cilantro - 30 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the bell peppers in half, remove the seeds and stems, and place them cut-side down on a baking sheet.
  3. Roast the peppers in the preheated oven for 20-25 minutes, or until the skins are blistered and blackened.
  4. Remove the peppers from the oven and place them in a bowl, covering with plastic wrap for 10 minutes to steam and loosen the skins.
  5. Peel the skins off the roasted peppers and chop them into small pieces.
  6. Finely chop the garlic, parsley, and cilantro.
  7. In a mixing bowl, combine the chopped peppers, garlic, parsley, and cilantro.
  8. Drizzle with olive oil and lemon juice, and sprinkle with ground cumin, salt, and black pepper.
  9. Toss everything together until well combined.
  10. Serve the salad slightly warm or at room temperature, garnished with additional herbs if desired.
