Ingredients

  • White fish fillet (cod or haddock) - 200 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1, diced
  • Red onion - 1/4, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, bring water to a boil and add a pinch of salt. Add the white fish fillet and poach for about 10 minutes until cooked through.
  2. Remove the fish from the pot and let it cool. Once cooled, flake the fish into bite-sized pieces.
  3. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, and finely chopped red onion.
  4. In a separate small bowl, whisk together the olive oil, lemon juice, cumin powder, salt, and black pepper to make the dressing.
  5. Add the flaked fish and chopped parsley to the vegetable mixture and pour the dressing over it. Gently toss to combine all the ingredients.
  6. Serve immediately or chill in the refrigerator for 15 minutes before serving to allow the flavors to meld.
