Ingredients
- White fish fillet (cod or haddock) - 200 grams
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Red bell pepper - 1, diced
- Red onion - 1/4, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Cumin powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, bring water to a boil and add a pinch of salt. Add the white fish fillet and poach for about 10 minutes until cooked through.
- Remove the fish from the pot and let it cool. Once cooled, flake the fish into bite-sized pieces.
- In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, and finely chopped red onion.
- In a separate small bowl, whisk together the olive oil, lemon juice, cumin powder, salt, and black pepper to make the dressing.
- Add the flaked fish and chopped parsley to the vegetable mixture and pour the dressing over it. Gently toss to combine all the ingredients.
- Serve immediately or chill in the refrigerator for 15 minutes before serving to allow the flavors to meld.
