- Black pepper - 1/4 teaspoon
- Cumin powder - 1/2 teaspoon
Steps
- Trim the leeks, removing the dark green parts, and slice the white and light green parts into thin rounds.
- Rinse the sliced leeks thoroughly under cold water to remove any dirt or grit, then drain well.
- In a pot of boiling salted water, blanch the leeks for about 5 minutes until tender, then drain and cool them under cold running water.
- Chop the fresh parsley and mint finely and set aside.
- Cut the cherry tomatoes in half and add them to a mixing bowl along with the blanched leeks.
- In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and cumin powder.
- Pour the dressing over the leek and tomato mixture, add the chopped herbs, and toss gently to combine.
