Ingredients

  • Leeks - 200 grams
  • Fresh parsley - 30 grams
  • Fresh mint - 15 grams
  • Cherry tomatoes - 100 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin powder - 1/2 teaspoon

Steps

  1. Trim the leeks, removing the dark green parts, and slice the white and light green parts into thin rounds.
  2. Rinse the sliced leeks thoroughly under cold water to remove any dirt or grit, then drain well.
  3. In a pot of boiling salted water, blanch the leeks for about 5 minutes until tender, then drain and cool them under cold running water.
  4. Chop the fresh parsley and mint finely and set aside.
  5. Cut the cherry tomatoes in half and add them to a mixing bowl along with the blanched leeks.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and cumin powder.
  7. Pour the dressing over the leek and tomato mixture, add the chopped herbs, and toss gently to combine.
  8. Serve immediately or let it chill in the refrigerator for 10 minutes to enhance the flavors.
