Ingredients
- green lentils - 100 grams
- carrot - 1 medium, diced
- red bell pepper - 1 medium, diced
- red onion - 1 small, finely chopped
- fresh parsley - 2 tablespoons, chopped
- cumin - 1 teaspoon
- coriander - 1/2 teaspoon
- olive oil - 2 tablespoons
- lemon juice - 1 tablespoon
- salt - to taste
- black pepper - to taste
Steps
- Rinse the green lentils under cold water and place them in a medium pot with 300 ml of water.
- Bring the water to a boil, then reduce the heat to low and simmer the lentils for about 20 minutes, or until tender. Drain and let cool.
- In a large mixing bowl, combine the diced carrot, red bell pepper, red onion, and chopped parsley.
- Add the cooked lentils to the vegetable mixture.
- In a small bowl, whisk together the olive oil, lemon juice, cumin, coriander, salt, and black pepper.
- Pour the dressing over the lentil salad and toss gently to combine all the ingredients evenly.
- Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
