Ingredients

  • green lentils - 100 grams
  • carrot - 1 medium, diced
  • red bell pepper - 1 medium, diced
  • red onion - 1 small, finely chopped
  • fresh parsley - 2 tablespoons, chopped
  • cumin - 1 teaspoon
  • coriander - 1/2 teaspoon
  • olive oil - 2 tablespoons
  • lemon juice - 1 tablespoon
  • salt - to taste
  • black pepper - to taste

Steps

  1. Rinse the green lentils under cold water and place them in a medium pot with 300 ml of water.
  2. Bring the water to a boil, then reduce the heat to low and simmer the lentils for about 20 minutes, or until tender. Drain and let cool.
  3. In a large mixing bowl, combine the diced carrot, red bell pepper, red onion, and chopped parsley.
  4. Add the cooked lentils to the vegetable mixture.
  5. In a small bowl, whisk together the olive oil, lemon juice, cumin, coriander, salt, and black pepper.
  6. Pour the dressing over the lentil salad and toss gently to combine all the ingredients evenly.
  7. Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
