Ingredients

  • Green or black lentils - 150 grams
  • Red bell pepper - 1, diced
  • Cucumber - 1, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Rinse the lentils under cold water and place them in a pot with 500 ml of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender but not mushy.
  2. While the lentils are cooking, prepare the vegetables: dice the red bell pepper, cucumber, and red onion, and chop the parsley and mint.
  3. In a large bowl, combine the diced vegetables, chopped herbs, cherry tomatoes, cumin, salt, and pepper.
  4. Once the lentils are cooked, drain them and let them cool slightly before adding them to the vegetable mixture.
  5. In a small bowl, whisk together the olive oil and lemon juice. Pour the dressing over the salad and toss gently to combine.
  6. Serve the salad at room temperature or chilled, garnished with additional herbs if desired.
