Ingredients
- Green or black lentils - 150 grams
- Red bell pepper - 1, diced
- Cucumber - 1, diced
- Red onion - 1 small, finely chopped
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Ground cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 100 grams, halved
Steps
- Rinse the lentils under cold water and place them in a pot with 500 ml of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender but not mushy.
- While the lentils are cooking, prepare the vegetables: dice the red bell pepper, cucumber, and red onion, and chop the parsley and mint.
- In a large bowl, combine the diced vegetables, chopped herbs, cherry tomatoes, cumin, salt, and pepper.
- Once the lentils are cooked, drain them and let them cool slightly before adding them to the vegetable mixture.
- In a small bowl, whisk together the olive oil and lemon juice. Pour the dressing over the salad and toss gently to combine.
- Serve the salad at room temperature or chilled, garnished with additional herbs if desired.
