  • Red onion - 1 small, sliced
  • Olive oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your grill or grill pan to medium-high heat.
  2. In a large bowl, combine the sliced zucchini, bell peppers, diced eggplant, and sliced red onion.
