Ingredients

  • Green beans - 200 grams
  • Canned chickpeas - 200 grams, drained and rinsed
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil and add the green beans. Cook for 5-7 minutes until tender but still crisp.
  2. Drain the green beans and immediately place them in a bowl of ice water to stop the cooking process and preserve their color.
  3. In a large mixing bowl, combine the drained chickpeas, cherry tomatoes, red onion, parsley, and mint.
