Ingredients

  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pomegranate seeds - 50g (for garnish)
  • Toasted almonds - 20g, sliced (for garnish)

Steps

  1. Wash the fennel bulb under cold water and remove the outer layers if they're damaged.
  2. Using a sharp knife or a mandoline, slice the fennel thinly and place the slices in a large mixing bowl.
  3. Chop the fresh parsley and mint, and add them to the bowl with the fennel.
  4. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the dressing.
