Ingredients

  • Couscous - 100 grams
  • Water - 150 milliliters
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 20 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, bring 150 milliliters of water to a boil. Remove from heat and stir in 100 grams of couscous. Cover and let it sit for 5 minutes until the water is absorbed.
  2. Fluff the couscous with a fork and let it cool to room temperature.
  3. In a large bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, and finely chopped red onion.
  4. Add the cooled couscous to the bowl with the vegetables.
  5. In a small bowl, whisk together the olive oil, lemon juice, ground cumin, salt, and black pepper.
  6. Pour the dressing over the couscous and vegetables, then gently toss to combine.
  7. Add the chopped parsley and mint, mixing well to incorporate the herbs.
