- Cauliflower - 300 grams
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Cherry tomatoes - 100 grams, halved
- Red onion - 1 small, thinly sliced
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into small florets and place them in a mixing bowl.
- Add olive oil, ground cumin, paprika, salt, and black pepper to the cauliflower and toss until evenly coated.
- Spread the cauliflower florets on a baking sheet and roast in the oven for 20 minutes, or until golden brown and tender.
- While the cauliflower is roasting, prepare the dressing by mixing lemon juice, chopped parsley, and chopped mint in a small bowl.
- Once the cauliflower is done, remove it from the oven and let it cool slightly.
- In a large bowl, combine the roasted cauliflower, cherry tomatoes, and red onion.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for 15 minutes to enhance the flavors.
