Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1 small, thinly sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into small florets and place them in a mixing bowl.
  3. Add olive oil, ground cumin, paprika, salt, and black pepper to the cauliflower and toss until evenly coated.
  4. Spread the cauliflower florets on a baking sheet and roast in the oven for 20 minutes, or until golden brown and tender.
  5. While the cauliflower is roasting, prepare the dressing by mixing lemon juice, chopped parsley, and chopped mint in a small bowl.
  6. Once the cauliflower is done, remove it from the oven and let it cool slightly.
  7. In a large bowl, combine the roasted cauliflower, cherry tomatoes, and red onion.
  8. Pour the dressing over the salad and toss gently to combine.
  9. Serve immediately or refrigerate for 15 minutes to enhance the flavors.
