Ingredients

  • Canned chickpeas (drained and rinsed) - 200 grams
  • Red bell pepper (diced) - 1 medium
  • Cucumber (diced) - 1 medium
  • Cherry tomatoes (halved) - 100 grams
  • Fresh parsley (chopped) - 30 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese (crumbled) - 50 grams (optional)

Steps

  1. In a large mixing bowl, combine the chopped kale with olive oil, lemon juice, ground cumin, salt, and black pepper. Massage the kale for about 2-3 minutes until it becomes tender.
  2. Add the drained chickpeas, diced red bell pepper, cucumber, cherry tomatoes, and chopped parsley to the bowl with the kale.
  3. Toss all the ingredients together until well mixed.
  4. If using, sprinkle crumbled feta cheese on top before serving.
  5. Serve immediately or let it chill in the refrigerator for 10 minutes for enhanced flavors.
