- Red bell pepper (diced) - 1 medium
- Cucumber (diced) - 1 medium
- Cherry tomatoes (halved) - 100 grams
- Fresh parsley (chopped) - 30 grams
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese (crumbled) - 50 grams (optional)
Steps
- In a large mixing bowl, combine the chopped kale with olive oil, lemon juice, ground cumin, salt, and black pepper. Massage the kale for about 2-3 minutes until it becomes tender.
- Add the drained chickpeas, diced red bell pepper, cucumber, cherry tomatoes, and chopped parsley to the bowl with the kale.
- Toss all the ingredients together until well mixed.
- If using, sprinkle crumbled feta cheese on top before serving.
- Serve immediately or let it chill in the refrigerator for 10 minutes for enhanced flavors.
