Ingredients

  • Broccoli florets - 200 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ground cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Almonds, sliced - 30 grams

Steps

  1. Bring a pot of salted water to a boil. Add the broccoli florets and blanch for 3-4 minutes until vibrant green and tender-crisp.
  2. Drain the broccoli and immediately plunge it into an ice bath to stop the cooking process. Let it cool for a few minutes and then drain again.
  3. In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper. Whisk together until well mixed.
  4. Add the cooled broccoli florets to the bowl and toss gently to coat them with the dressing.
  5. Fold in the sliced almonds and chopped parsley, mixing until evenly distributed.
  6. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
