Ingredients

  • Bulgur wheat - 100 grams
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Red onion - 50 grams, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Lemon juice - 30 ml
  • Olive oil - 20 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Rinse the bulgur wheat under cold water and then soak it in boiling water for about 10 minutes until it absorbs the water and becomes tender.
  2. In a large bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, finely chopped red onion, chopped parsley, and chopped mint.
  3. Once the bulgur is ready, fluff it with a fork and add it to the bowl of vegetables.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the dressing.
  5. Pour the dressing over the salad and gently toss everything together until well combined.
  6. Let the salad sit for about 10 minutes at room temperature to allow the flavors to meld before serving.
