Ingredients

  • Beets - 300 grams
  • Fresh parsley - 30 grams
  • Fresh mint - 15 grams
  • Garlic - 1 clove
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Pomegranate seeds - 50 grams

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the beets thoroughly, wrap them in aluminum foil, and place them on a baking tray.
  3. Roast the beets in the preheated oven for about 30-35 minutes, or until they are tender when pierced with a fork.
  4. Once roasted, remove the beets from the oven and allow them to cool slightly before peeling off the skin.
  5. While the beets are cooling, finely chop the parsley and mint, and mince the garlic.
  6. In a bowl, combine the olive oil, lemon juice, cumin powder, salt, and black pepper to create the dressing.
  7. Slice the peeled beets into thin wedges and place them in a salad bowl.
  8. Add the chopped herbs, minced garlic, and pomegranate seeds to the beets.
  9. Pour the dressing over the salad and gently toss to combine all the ingredients.
  10. Serve chilled or at room temperature.
