- Beets - 300 grams
- Fresh parsley - 30 grams
- Fresh mint - 15 grams
- Garlic - 1 clove
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Cumin powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Pomegranate seeds - 50 grams
Steps
- Preheat your oven to 200°C (400°F).
- Wash the beets thoroughly, wrap them in aluminum foil, and place them on a baking tray.
- Roast the beets in the preheated oven for about 30-35 minutes, or until they are tender when pierced with a fork.
- Once roasted, remove the beets from the oven and allow them to cool slightly before peeling off the skin.
- While the beets are cooling, finely chop the parsley and mint, and mince the garlic.
- In a bowl, combine the olive oil, lemon juice, cumin powder, salt, and black pepper to create the dressing.
- Slice the peeled beets into thin wedges and place them in a salad bowl.
- Add the chopped herbs, minced garlic, and pomegranate seeds to the beets.
- Pour the dressing over the salad and gently toss to combine all the ingredients.
- Serve chilled or at room temperature.
