Ingredients

  • Beets - 300 grams
  • Fresh parsley - 30 grams, chopped
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Paprika - 1/4 teaspoon
  • Black pepper - to taste
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the beets thoroughly, wrap them in aluminum foil, and place them on a baking tray.
  3. Roast the beets in the preheated oven for about 45 minutes, or until they are tender when pierced with a fork.
  4. Once cooked, let the beets cool slightly, then peel off the skin and cut them into bite-sized cubes.
  5. In a large mixing bowl, combine the chopped parsley, minced garlic, olive oil, lemon juice, salt, ground cumin, paprika, and black pepper.
  6. Add the cubed beets to the bowl and gently toss until they are evenly coated with the dressing.
  7. If using, sprinkle crumbled feta cheese over the salad and give it a light toss.
  8. Serve the salad at room temperature or chilled, garnished with extra parsley if desired.
