- Ground cumin - 1/2 teaspoon
- Paprika - 1/4 teaspoon
- Black pepper - to taste
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat your oven to 200°C (400°F).
- Wash the beets thoroughly, wrap them in aluminum foil, and place them on a baking tray.
- Roast the beets in the preheated oven for about 45 minutes, or until they are tender when pierced with a fork.
- Once cooked, let the beets cool slightly, then peel off the skin and cut them into bite-sized cubes.
- In a large mixing bowl, combine the chopped parsley, minced garlic, olive oil, lemon juice, salt, ground cumin, paprika, and black pepper.
- Add the cubed beets to the bowl and gently toss until they are evenly coated with the dressing.
