Ingredients

  • Bell peppers - 2 medium (1 red, 1 green)
  • Tomatoes - 2 medium
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Preheat the grill or oven to 200°C (400°F).
  2. Place the bell peppers and tomatoes on the grill or in the oven, and roast them for about 20 minutes, turning occasionally, until the skins are blistered and charred.
  3. Remove the vegetables from the grill/oven and let them cool for a few minutes.
  4. Once cooled, peel the skins off the peppers and tomatoes. Chop them roughly and place them in a mixing bowl.
  5. Add the minced garlic, olive oil, cumin, coriander, salt, black pepper, and lemon juice to the chopped vegetables. Mix well to combine.
  6. Garnish with chopped parsley and cilantro before serving.
