Ingredients
- Bell peppers - 2 medium (1 red, 1 green)
- Tomatoes - 2 medium
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Preheat the grill or oven to 200°C (400°F).
- Place the bell peppers and tomatoes on the grill or in the oven, and roast them for about 20 minutes, turning occasionally, until the skins are blistered and charred.
- Remove the vegetables from the grill/oven and let them cool for a few minutes.
- Once cooled, peel the skins off the peppers and tomatoes. Chop them roughly and place them in a mixing bowl.
- Add the minced garlic, olive oil, cumin, coriander, salt, black pepper, and lemon juice to the chopped vegetables. Mix well to combine.
- Garnish with chopped parsley and cilantro before serving.
