Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Saffron threads - 1/4 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, and sauté for 3-4 minutes until the onion is translucent.
  3. Stir in the diced carrot and celery, and cook for another 5 minutes.
  4. Add the zucchini, red bell pepper, and tomato, cooking for an additional 3-4 minutes.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add the saffron threads, cumin powder, coriander powder, salt, and black pepper to the pot.
  7. Cover and let the soup simmer for about 15 minutes, allowing the flavors to meld.
  8. Taste and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh parsley.
