- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Saffron threads - 1/4 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, and sauté for 3-4 minutes until the onion is translucent.
- Stir in the diced carrot and celery, and cook for another 5 minutes.
- Add the zucchini, red bell pepper, and tomato, cooking for an additional 3-4 minutes.
- Pour in the vegetable broth and bring to a simmer.
- Add the saffron threads, cumin powder, coriander powder, salt, and black pepper to the pot.
- Cover and let the soup simmer for about 15 minutes, allowing the flavors to meld.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
