- Basmati rice - 150 grams
- Vegetable broth - 400 ml
- Saffron threads - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Frozen peas - 100 grams
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm vegetable broth for about 10 minutes.
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until softened and fragrant, about 3-4 minutes.
- Add the diced carrot, bell pepper, and zucchini to the pan. Sauté for another 5-7 minutes until the vegetables are tender.
- Stir in the ground cumin, ground coriander, salt, and black pepper, mixing well to coat the vegetables.
- Add the drained rice to the saucepan, stirring to combine with the vegetables. Pour in the remaining vegetable broth and the saffron mixture, bringing it to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the rice is tender and has absorbed the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork and stir in the frozen peas.
- Serve hot, garnished with fresh parsley.
