Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 400 ml
  • Saffron threads - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Frozen peas - 100 grams
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm vegetable broth for about 10 minutes.
  2. Rinse the basmati rice under cold water until the water runs clear, then drain.
  3. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until softened and fragrant, about 3-4 minutes.
  4. Add the diced carrot, bell pepper, and zucchini to the pan. Sauté for another 5-7 minutes until the vegetables are tender.
  5. Stir in the ground cumin, ground coriander, salt, and black pepper, mixing well to coat the vegetables.
  6. Add the drained rice to the saucepan, stirring to combine with the vegetables. Pour in the remaining vegetable broth and the saffron mixture, bringing it to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the rice is tender and has absorbed the liquid.
  8. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork and stir in the frozen peas.
  9. Serve hot, garnished with fresh parsley.
