  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Vegetable broth - 250 milliliters
  • Saffron threads - 0.1 grams
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the diced bell pepper, zucchini, and carrot. Cook for about 5-6 minutes until the vegetables begin to soften.
  5. Add the cherry tomatoes, vegetable broth, saffron threads, ground cumin, ground coriander, paprika, salt, and black pepper. Bring to a simmer and cook for another 5-7 minutes until the sauce thickens slightly.
  6. Add the cooked pasta to the skillet and toss everything together until well combined and heated through.
  7. Serve hot, garnished with fresh parsley.
