- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Bell pepper (red or yellow) - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Vegetable broth - 250 milliliters
- Saffron threads - 0.1 grams
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced bell pepper, zucchini, and carrot. Cook for about 5-6 minutes until the vegetables begin to soften.
- Add the cherry tomatoes, vegetable broth, saffron threads, ground cumin, ground coriander, paprika, salt, and black pepper. Bring to a simmer and cook for another 5-7 minutes until the sauce thickens slightly.
- Add the cooked pasta to the skillet and toss everything together until well combined and heated through.
- Serve hot, garnished with fresh parsley.
