- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Lemon juice - 1 tablespoon
Steps
- In a medium pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 5 minutes until softened.
- Stir in the minced garlic, diced carrot, and celery, cooking for an additional 3-4 minutes.
- Add the diced potato, vegetable broth, saffron threads, cumin powder, salt, and black pepper to the pot.
- Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the vegetables are tender.
