  • Vegetable broth - 500 ml
  • Saffron threads - 1/4 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic, diced carrot, and celery, cooking for an additional 3-4 minutes.
  4. Add the diced potato, vegetable broth, saffron threads, cumin powder, salt, and black pepper to the pot.
  5. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the vegetables are tender.
  6. Using an immersion blender, blend the soup until smooth and creamy. (Alternatively, transfer to a blender in batches.)
  7. Stir in the lemon juice and adjust seasoning if needed.
