Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Saffron threads - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Medium onion, finely chopped - 1
  • Garlic clove, minced - 1
  • Raisins - 50 grams
  • Cinnamon stick - 1
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped fresh parsley - 2 tablespoons
  • Almonds, toasted and roughly chopped - 30 grams

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their color and flavor.
  2. Rinse the basmati rice under cold water until the water runs clear to remove excess starch, then drain.
  3. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  5. Stir in the drained rice, salt, black pepper, and the cinnamon stick, cooking for about 2 minutes to toast the rice slightly.
  6. Pour in the 300 ml of water, followed by the saffron with its soaking water. Stir to combine and bring to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan with a lid, and simmer for 15 minutes or until the rice is tender and the water is absorbed.
  8. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  9. Remove the cinnamon stick, fluff the rice with a fork, and gently fold in the raisins and chopped parsley.
  10. Serve the saffron rice topped with toasted almonds for added crunch.
