- Basmati rice - 150 grams
- Water - 300 ml
- Saffron threads - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Medium onion, finely chopped - 1
- Garlic clove, minced - 1
- Raisins - 50 grams
- Cinnamon stick - 1
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped fresh parsley - 2 tablespoons
- Almonds, toasted and roughly chopped - 30 grams
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their color and flavor.
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Stir in the drained rice, salt, black pepper, and the cinnamon stick, cooking for about 2 minutes to toast the rice slightly.
- Pour in the 300 ml of water, followed by the saffron with its soaking water. Stir to combine and bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan with a lid, and simmer for 15 minutes or until the rice is tender and the water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Remove the cinnamon stick, fluff the rice with a fork, and gently fold in the raisins and chopped parsley.
- Serve the saffron rice topped with toasted almonds for added crunch.
