Ingredients
- Basmati rice - 150 grams
- Water - 300 ml
- Saffron threads - 0.1 grams
- Olive oil - 1 tablespoon
- Onion, finely chopped - 1 small (about 70 grams)
- Garlic, minced - 1 clove
- Cinnamon stick - 1 small piece
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Raisins - 30 grams
- Almonds, slivered - 20 grams
- Fresh parsley, chopped - 2 tablespoons
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes.
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and the cinnamon stick, and sauté for an additional minute until fragrant.
- Stir in the rinsed rice, salt, and black pepper, and cook for 2-3 minutes, stirring occasionally to toast the rice slightly.
- Pour in the 300 ml of water and the saffron with its soaking water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the water has been absorbed.
- In the last 5 minutes of cooking, add the raisins to the rice.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, then stir in the slivered almonds and chopped parsley before serving.
