Ingredients

  • Quinoa - 100g
  • Vegetable broth - 250ml
  • Saffron strands - 0.1g
  • Chickpeas - 100g (cooked and drained)
  • Red onion - 50g (finely chopped)
  • Garlic - 1 clove (minced)
  • Carrot - 50g (grated)
  • Coriander leaves - 20g (chopped)
  • Cumin powder - 1 tsp
  • Paprika - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Olive oil - 2 tbsp
  • Whole wheat burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 (sliced)

Steps

  1. Rinse the quinoa under cold water and then cook it in vegetable broth with saffron strands for about 15 minutes until fluffy. Let it cool slightly.
  2. In a large mixing bowl, mash the cooked chickpeas with a fork until slightly chunky.
  3. Add the cooked quinoa, red onion, garlic, grated carrot, chopped coriander, cumin powder, paprika, salt, and black pepper to the bowl. Mix until well combined.
  4. Form the mixture into two burger patties, ensuring they hold together well.
  5. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side until golden brown and crispy.
  6. Toast the whole wheat burger buns in the skillet for 1-2 minutes until lightly browned.
  7. Assemble the burgers by placing a lettuce leaf and a slice of tomato on the bottom half of each bun, followed by the quinoa burger patty, and then the top half of the bun.
  8. Serve immediately with a side of your choice.
