  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a small bowl, combine saffron strands with 1 tablespoon of warm water and let it steep for 10 minutes.
  2. In a separate bowl, mix olive oil, minced garlic, cumin, coriander, paprika, cinnamon, salt, black pepper, and lemon juice.
  3. Add the saffron mixture to the spice blend and stir well to combine.
  4. Place the lamb chops in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Remove lamb chops from the marinade and let excess marinade drip off.
  7. Grill the lamb chops for about 3-4 minutes per side for medium-rare, or until your desired doneness is achieved.
  8. Remove from the grill and let rest for 5 minutes before serving.
