Steps
- Preheat your oven to 220°C (428°F).
- In a small bowl, soak the saffron threads in 2 tablespoons of hot water for about 10 minutes to release their flavor.
- While the saffron is soaking, heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper, sliced zucchini, and thinly sliced red onion to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
- Stir in the halved cherry tomatoes, fresh spinach, cumin powder, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach wilts.
- Remove the skillet from heat and stir in the saffron water mixture and nutritional yeast (if using). Mix well to combine the flavors.
- Roll out the pizza dough on a floured surface until it's about 10 inches in diameter.
- Transfer the rolled-out dough to a pizza stone or baking sheet lined with parchment paper.
