Ingredients

  • Pizza dough - 200 grams

  • Zucchini - 1 small, sliced
  • Red onion - 1 small, thinly sliced
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams, fresh
  • Saffron threads - 0.1 grams (a pinch)
  • Water - 2 tablespoons, hot
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons (optional, for cheesy flavor)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a small bowl, soak the saffron threads in 2 tablespoons of hot water for about 10 minutes to release their flavor.
  3. While the saffron is soaking, heat 1 tablespoon of olive oil in a skillet over medium heat.
  4. Add the minced garlic and sauté for 1 minute until fragrant.
  5. Add the diced red bell pepper, sliced zucchini, and thinly sliced red onion to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
  6. Stir in the halved cherry tomatoes, fresh spinach, cumin powder, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach wilts.
  7. Remove the skillet from heat and stir in the saffron water mixture and nutritional yeast (if using). Mix well to combine the flavors.
  8. Roll out the pizza dough on a floured surface until it's about 10 inches in diameter.
  9. Transfer the rolled-out dough to a pizza stone or baking sheet lined with parchment paper.
  10. Brush the surface of the dough with the remaining 1 tablespoon of olive oil.
  11. Spread the vegetable mixture evenly over the pizza dough.
