- Basmati rice - 150 grams
- Water - 400 milliliters
- Saffron threads - 0.1 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Raisins - 30 grams
- Cinnamon - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped fresh parsley - 2 tablespoons (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a small bowl, steep the saffron threads in 2 tablespoons of warm water to release their color and flavor.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced carrot, cooking for another 2-3 minutes until the carrot softens.
- Stir in the cinnamon, cumin, salt, and black pepper, and cook for 1 minute until fragrant.
- Drain the soaked rice and add it to the pot, stirring to coat the rice with the spices and vegetables.
- Pour in the 400 milliliters of water along with the saffron infusion (including the threads) and bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes until the rice is tender and the liquid is absorbed.
- Remove the pot from the heat and let it sit, covered, for an additional 5 minutes to allow the flavors to meld.
- Fluff the rice with a fork, stir in the raisins, and garnish with chopped fresh parsley before serving.
