Ingredients

  • Basmati rice - 150 grams
  • Water - 400 milliliters
  • Saffron threads - 0.1 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Raisins - 30 grams
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped fresh parsley - 2 tablespoons (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a small bowl, steep the saffron threads in 2 tablespoons of warm water to release their color and flavor.
  3. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic and diced carrot, cooking for another 2-3 minutes until the carrot softens.
  5. Stir in the cinnamon, cumin, salt, and black pepper, and cook for 1 minute until fragrant.
  6. Drain the soaked rice and add it to the pot, stirring to coat the rice with the spices and vegetables.
  7. Pour in the 400 milliliters of water along with the saffron infusion (including the threads) and bring to a boil.
  8. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes until the rice is tender and the liquid is absorbed.
  9. Remove the pot from the heat and let it sit, covered, for an additional 5 minutes to allow the flavors to meld.
  10. Fluff the rice with a fork, stir in the raisins, and garnish with chopped fresh parsley before serving.
