- Tahini - 30 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Saffron strands - 1/4 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Water - 3 tablespoons
- Paprika - for garnish
- Fresh parsley - for garnish
Steps
- In a small bowl, soak the saffron strands in 1 tablespoon of warm water for about 5 minutes to release their flavor.
- In a food processor, combine the cooked chickpeas, tahini, olive oil, lemon juice, minced garlic, cumin, salt, and the saffron water mixture.
- Blend until smooth, adding additional water one tablespoon at a time if needed to reach a creamy consistency.
- Taste and adjust seasoning as desired.
- Transfer the hummus to a serving bowl and drizzle with a little extra olive oil.
- Sprinkle paprika and chopped fresh parsley on top for garnish.
- Serve with fresh vegetables, pita bread, or crackers.
