Ingredients

  • Chickpeas - 200 grams, cooked and drained
  • Tahini - 30 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Saffron strands - 1/4 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 3 tablespoons
  • Paprika - for garnish
  • Fresh parsley - for garnish

Steps

  1. In a small bowl, soak the saffron strands in 1 tablespoon of warm water for about 5 minutes to release their flavor.
  2. In a food processor, combine the cooked chickpeas, tahini, olive oil, lemon juice, minced garlic, cumin, salt, and the saffron water mixture.
  3. Blend until smooth, adding additional water one tablespoon at a time if needed to reach a creamy consistency.
  4. Taste and adjust seasoning as desired.
  5. Transfer the hummus to a serving bowl and drizzle with a little extra olive oil.
  6. Sprinkle paprika and chopped fresh parsley on top for garnish.
  7. Serve with fresh vegetables, pita bread, or crackers.
