Ingredients

  • Zucchini - 150 grams
  • Bell pepper (red or yellow) - 150 grams
  • Eggplant - 150 grams
  • Red onion - 100 grams
  • Cherry tomatoes - 100 grams
  • Olive oil - 3 tablespoons
  • Saffron threads - 0.5 grams
  • Garlic (minced) - 2 cloves
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 0.5 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their flavor.
  2. While the saffron is soaking, wash and cut the zucchini, bell pepper, eggplant, and red onion into bite-sized pieces.
  3. In a large bowl, combine the cut vegetables with the cherry tomatoes, minced garlic, olive oil, soaked saffron (including the water), ground cumin, paprika, salt, and black pepper. Toss everything until the vegetables are well coated.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Once hot, add the marinated vegetables in a single layer, grilling for about 5-7 minutes on each side or until they become tender and have grill marks.
  6. Remove the grilled vegetables from the grill and sprinkle with fresh parsley before serving.
