- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 0.5 teaspoon
- Fresh lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a small bowl, steep the saffron threads in 2 tablespoons of warm water for about 10 minutes.
- In a mixing bowl, combine the olive oil, minced garlic, ground cumin, paprika, salt, black pepper, lemon juice, and the saffron water.
- Add the quails to the marinade and ensure they are fully coated. Cover and refrigerate for at least 30 minutes to let the flavors infuse.
- Preheat your grill to medium-high heat. Remove the quails from the marinade and let any excess drip off.
- Grill the quails for about 6-8 minutes on each side, or until the internal temperature reaches 74°C (165°F) and they are golden brown.
