Ingredients
- Chicken breast - 500 grams, cut into 2.5 cm cubes
- Saffron threads - 0.1 grams
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Skewers - 4 (soaked in water if wooden)
Steps
- In a small bowl, dissolve the saffron threads in 2 tablespoons of warm water and set aside.
- In a large mixing bowl, combine olive oil, minced garlic, ground cumin, paprika, ground coriander, salt, black pepper, chopped cilantro, and lemon juice.
- Add the saffron water to the marinade mixture and stir well.
- Add the chicken cubes to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour (or up to overnight for more flavor).
- Preheat your grill or BBQ to medium-high heat.
- Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving. Garnish with additional chopped cilantro if desired.
