Ingredients

  • Cauliflower - 300 grams
  • Chicken breast - 200 grams
  • Saffron threads - 0.1 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Almond flour - 100 grams
  • Egg - 1 large
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 220°C (428°F).
  2. To make the cauliflower crust, steam the cauliflower florets until tender, about 8 minutes. Drain and let cool.
  3. In a food processor, pulse the cauliflower until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
  4. In a bowl, combine the cauliflower rice, almond flour, egg, salt, and pepper. Mix until a dough forms.
  5. Press the dough onto a parchment-lined baking sheet to form a round pizza crust, about 1 cm thick.
  6. Bake the crust in the preheated oven for 15 minutes or until golden brown.
  7. While the crust is baking, marinate the chicken. In a bowl, combine olive oil, saffron, garlic, cumin, coriander, paprika, salt, and pepper. Add the chicken and coat well. Let marinate for 10 minutes.
  8. In a skillet over medium heat, cook the marinated chicken for about 6-8 minutes on each side, or until fully cooked. Remove from heat and slice into strips.
  9. Remove the crust from the oven and layer the cherry tomatoes and saffron chicken on top.
  10. Return to the oven and bake for an additional 10 minutes.
  11. Garnish with chopped parsley before serving.
