- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bell pepper - 1 medium, cut into 2.5 cm pieces (for skewering)
- Red onion - 1 medium, cut into wedges (for skewering)
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes prior)
Steps
- In a small bowl, soak the saffron strands in warm water for about 10 minutes to release their color and flavor.
- In a larger mixing bowl, combine the saffron water, olive oil, minced garlic, ground cumin, ground coriander, paprika, lemon juice, salt, and black pepper.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow flavors to infuse.
- Preheat the grill or barbecue to medium-high heat.
- Thread the marinated chicken, bell pepper pieces, and red onion wedges onto the skewers alternately.
- Place the skewers on the grill and cook for about 8-10 minutes on each side, or until the chicken is fully cooked and has nice grill marks.
- Remove from the grill and let the kebabs rest for a few minutes before serving.
