Ingredients

  • Chicken breast - 300 grams, cut into 2.5 cm cubes

  • Warm water - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bell pepper - 1 medium, cut into 2.5 cm pieces (for skewering)
  • Red onion - 1 medium, cut into wedges (for skewering)
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes prior)

Steps

  1. In a small bowl, soak the saffron strands in warm water for about 10 minutes to release their color and flavor.
  2. In a larger mixing bowl, combine the saffron water, olive oil, minced garlic, ground cumin, ground coriander, paprika, lemon juice, salt, and black pepper.
  3. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow flavors to infuse.
  4. Preheat the grill or barbecue to medium-high heat.
  5. Thread the marinated chicken, bell pepper pieces, and red onion wedges onto the skewers alternately.
  6. Place the skewers on the grill and cook for about 8-10 minutes on each side, or until the chicken is fully cooked and has nice grill marks.
  7. Remove from the grill and let the kebabs rest for a few minutes before serving.
