- Almond flour - 100 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Saffron threads - a pinch
- Chicken breast - 200 grams, diced
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Bell pepper - 1/2, diced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, egg, olive oil, salt, cumin, coriander, and paprika. Mix until a dough forms.
- Place the dough between two sheets of parchment paper and roll it out to about 1/4 inch thick. Transfer to a baking sheet and bake for 10 minutes or until lightly golden.
- While the flatbread is baking, soak the saffron threads in a tablespoon of warm water to release their color and flavor.
- In a skillet over medium heat, add a drizzle of olive oil. Sauté the onion and garlic until translucent, about 3 minutes.
- Add the diced chicken, bell pepper, and the saffron mixture to the skillet. Cook until the chicken is no longer pink and fully cooked, about 7-10 minutes.
- Stir in lemon juice and fresh parsley, mixing well. Remove from heat.
- Once the flatbread is done baking, remove it from the oven and top with the saffron chicken mixture evenly.
- Return it to the oven for an additional 5 minutes to heat through.
- Serve warm, garnished with additional parsley if desired.
