Ingredients

  • Almond flour - 100 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Saffron threads - a pinch
  • Chicken breast - 200 grams, diced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Bell pepper - 1/2, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, egg, olive oil, salt, cumin, coriander, and paprika. Mix until a dough forms.
  3. Place the dough between two sheets of parchment paper and roll it out to about 1/4 inch thick. Transfer to a baking sheet and bake for 10 minutes or until lightly golden.
  4. While the flatbread is baking, soak the saffron threads in a tablespoon of warm water to release their color and flavor.
  5. In a skillet over medium heat, add a drizzle of olive oil. Sauté the onion and garlic until translucent, about 3 minutes.
  6. Add the diced chicken, bell pepper, and the saffron mixture to the skillet. Cook until the chicken is no longer pink and fully cooked, about 7-10 minutes.
  7. Stir in lemon juice and fresh parsley, mixing well. Remove from heat.
  8. Once the flatbread is done baking, remove it from the oven and top with the saffron chicken mixture evenly.
  9. Return it to the oven for an additional 5 minutes to heat through.
  10. Serve warm, garnished with additional parsley if desired.
