  • Saffron strands - 0.1 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Yogurt - 4 tablespoons, for sauce
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, soak the saffron strands in 2 tablespoons of warm water for about 10 minutes.
  2. In a large bowl, combine the ground chicken, minced garlic, chopped onion, cumin, coriander, paprika, salt, black pepper, olive oil, and the saffron water mixture.
  3. Mix well until all the ingredients are evenly combined, then form the mixture into two burger patties.
  4. Heat a non-stick skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until the internal temperature reaches 75°C (165°F).
  5. While the burgers are cooking, mix the yogurt with lemon juice in a small bowl to create a sauce.
  6. Toast the whole wheat burger buns in the skillet for 1-2 minutes until golden brown.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the saffron chicken patty, a slice of tomato, and a generous spoonful of the yogurt sauce. Top with the other half of the bun.
  8. Serve immediately with your choice of side.
