Ingredients

  • Cauliflower - 400 grams, cut into florets
  • Olive oil - 2 tablespoons
  • Saffron threads - 1/4 teaspoon, steeped in 1 tablespoon of warm water
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped fresh parsley - 2 tablespoons (for garnish)

Steps

  1. In a large pot, bring salted water to a boil and blanch the cauliflower florets for 3-4 minutes until slightly tender. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the blanched cauliflower florets to the skillet and stir in the cumin, paprika, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is lightly browned.
  4. Pour the saffron water over the cauliflower and toss well to combine. Continue to cook for another 2-3 minutes until the saffron is evenly distributed and the cauliflower is thoroughly heated.
  5. Remove from heat and garnish with chopped fresh parsley before serving.
