Ingredients
- Cauliflower - 400 grams, cut into florets
- Olive oil - 2 tablespoons
- Saffron threads - 1/4 teaspoon, steeped in 1 tablespoon of warm water
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped fresh parsley - 2 tablespoons (for garnish)
Steps
- In a large pot, bring salted water to a boil and blanch the cauliflower florets for 3-4 minutes until slightly tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the blanched cauliflower florets to the skillet and stir in the cumin, paprika, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is lightly browned.
- Pour the saffron water over the cauliflower and toss well to combine. Continue to cook for another 2-3 minutes until the saffron is evenly distributed and the cauliflower is thoroughly heated.
- Remove from heat and garnish with chopped fresh parsley before serving.
