Ingredients
- Carrots - 300 grams, peeled and sliced into thin rounds
- Olive oil - 2 tablespoons
- Saffron threads - 1/4 teaspoon
- Water - 120 milliliters
- Honey - 1 tablespoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their flavor and color.
- In a medium saucepan, heat the olive oil over medium heat. Add the sliced carrots and sauté for about 5 minutes until they start to soften.
- Stir in the honey, cinnamon, salt, black pepper, and the saffron mixture (including the soaking water).
- Add the remaining 120 milliliters of water to the saucepan and bring to a simmer.
- Cover and cook for 15 minutes, or until the carrots are tender and the liquid has reduced to a syrupy consistency.
- Remove from heat and garnish with chopped fresh parsley before serving.
