  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the cubed pumpkin, olive oil, ground cumin, ground cinnamon, paprika, salt, and black pepper. Toss until the pumpkin is evenly coated.
  3. Spread the seasoned pumpkin cubes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, or until the pumpkin is tender and slightly caramelized, turning halfway through the cooking time.
