Ingredients

  • All-purpose flour - 150 grams
  • Olive oil - 60 ml
  • Warm water - 60 ml
  • Salt - 1/2 teaspoon
  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Garlic - 2 cloves
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Black olives - 50 grams, sliced
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a bowl, mix the flour and salt. Gradually add warm water and olive oil, kneading until a smooth dough forms. Cover and let it rest for 15 minutes.
  3. While the dough rests, roast the red and yellow bell peppers. Place them on a baking tray and drizzle with olive oil. Add crushed garlic cloves, cumin, paprika, and chili flakes. Roast in the oven for 20 minutes until tender and slightly charred.
  4. After roasting, remove the peppers from the oven, and let them cool slightly. Peel off the skin, remove the seeds, and slice the peppers.
  5. Roll out the dough on a floured surface to form a circle about 1/4 inch thick. Transfer to a baking sheet lined with parchment paper.
  6. Spread the roasted peppers evenly over the dough, leaving a small border. Sprinkle sliced olives and chopped parsley on top.
  7. Drizzle with lemon juice and a little more olive oil. Bake in the oven for 15-20 minutes until the crust is golden brown.
  8. Remove from the oven, slice, and serve warm.
