Ingredients

  • Pizza dough - 200 grams
  • Red bell pepper - 1 medium, sliced
  • Yellow bell pepper - 1 medium, sliced
  • Cherry tomatoes - 150 grams, halved
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Harissa paste - 1 tablespoon (optional)
  • Balsamic glaze - for drizzling (optional)

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a bowl, combine sliced red and yellow bell peppers, cherry tomatoes, minced garlic, olive oil, cumin, coriander, paprika, salt, and black pepper. Toss well to coat the vegetables.
  3. Spread the vegetables on a baking sheet lined with parchment paper and roast in the preheated oven for about 15 minutes, or until they are tender and slightly caramelized.
  4. While the vegetables are roasting, roll out the pizza dough on a floured surface to your desired thickness.
  5. Transfer the rolled-out dough to a pizza stone or baking sheet.
  6. Once the vegetables are done roasting, remove them from the oven and spread them evenly over the pizza dough.
  7. Sprinkle crumbled feta cheese over the top of the vegetables.
  8. If using, drizzle harissa paste over the pizza for an extra kick.
  9. Bake the pizza in the oven for an additional 10-12 minutes, or until the crust is golden brown.
  10. Remove the pizza from the oven and let it cool for a couple of minutes. Drizzle with balsamic glaze and sprinkle with fresh parsley before serving.
