- Pizza dough - 200 grams
- Red bell pepper - 1 medium, sliced
- Yellow bell pepper - 1 medium, sliced
- Cherry tomatoes - 150 grams, halved
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Harissa paste - 1 tablespoon (optional)
- Balsamic glaze - for drizzling (optional)
Steps
- Preheat your oven to 220°C (428°F).
- In a bowl, combine sliced red and yellow bell peppers, cherry tomatoes, minced garlic, olive oil, cumin, coriander, paprika, salt, and black pepper. Toss well to coat the vegetables.
- Spread the vegetables on a baking sheet lined with parchment paper and roast in the preheated oven for about 15 minutes, or until they are tender and slightly caramelized.
- While the vegetables are roasting, roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled-out dough to a pizza stone or baking sheet.
- Once the vegetables are done roasting, remove them from the oven and spread them evenly over the pizza dough.
- Sprinkle crumbled feta cheese over the top of the vegetables.
- If using, drizzle harissa paste over the pizza for an extra kick.
- Bake the pizza in the oven for an additional 10-12 minutes, or until the crust is golden brown.
- Remove the pizza from the oven and let it cool for a couple of minutes. Drizzle with balsamic glaze and sprinkle with fresh parsley before serving.
