Ingredients

  • Cauliflower - 400 grams, cut into florets
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Red bell pepper - 1, diced
  • Chickpeas - 200 grams, cooked or canned, drained and rinsed
  • Tomatoes - 200 grams, diced (or 1 cup canned)
  • Vegetable broth - 250 ml
  • Ras el hanout - 1 tablespoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - a handful, chopped (for garnish)
  • Lemon - 1, juiced

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Spread the cauliflower on a baking sheet and roast in the oven for 20 minutes or until golden and tender.
  3. While the cauliflower is roasting, heat the remaining 1 tablespoon of olive oil in a large pot over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  4. Add the minced garlic, sliced carrot, and diced red bell pepper to the pot. Sauté for another 5-6 minutes until the vegetables begin to soften.
  5. Stir in the ras el hanout, cumin, and cinnamon, cooking for 1-2 minutes until fragrant.
  6. Add the diced tomatoes and chickpeas to the pot, followed by the vegetable broth. Stir to combine and bring to a simmer. Cook for about 10 minutes, allowing the flavors to meld.
  7. Once the cauliflower is done roasting, add it to the pot and stir gently to combine. Adjust seasoning with salt and pepper as needed.
  8. Remove the pot from heat and stir in the lemon juice. Serve hot, garnished with chopped cilantro.
