Ingredients
- Cauliflower - 400 grams, cut into florets
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, sliced
- Red bell pepper - 1, diced
- Chickpeas - 200 grams, cooked or canned, drained and rinsed
- Tomatoes - 200 grams, diced (or 1 cup canned)
- Vegetable broth - 250 ml
- Ras el hanout - 1 tablespoon
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - a handful, chopped (for garnish)
- Lemon - 1, juiced
Steps
- Preheat your oven to 220°C (428°F).
- In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Spread the cauliflower on a baking sheet and roast in the oven for 20 minutes or until golden and tender.
- While the cauliflower is roasting, heat the remaining 1 tablespoon of olive oil in a large pot over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, sliced carrot, and diced red bell pepper to the pot. Sauté for another 5-6 minutes until the vegetables begin to soften.
- Stir in the ras el hanout, cumin, and cinnamon, cooking for 1-2 minutes until fragrant.
- Add the diced tomatoes and chickpeas to the pot, followed by the vegetable broth. Stir to combine and bring to a simmer. Cook for about 10 minutes, allowing the flavors to meld.
- Once the cauliflower is done roasting, add it to the pot and stir gently to combine. Adjust seasoning with salt and pepper as needed.
- Remove the pot from heat and stir in the lemon juice. Serve hot, garnished with chopped cilantro.
